Super Recipes Sunday: My Favorite Meals from the Week

So, I am happy to report that I successfully defended my thesis and it was such an enjoyable experience! I had a lot of fun being able to talk about my research and fielding questions from my committee, and I am excited to keep on conducting health communication research. Now I just need to apply my thesis edits and submit it to the graduate school, and then I'll be done! Woohoo!

I also recently got hired at the YMCA to be a member specialist, and I might even get the chance to teach fitness classes as well :D I am excited for this job, and I'm really looking forward to FREE ZUMBA!!! classes.

Aside from those updates, things are status quo, and I'm really happy that I have some more free time now that thesis is completed. I feel like a real human being again :-)

Anyway, here's some of my meals from the week. I hope you find my plates both aesthetically pleasing and inspiring!

1) Chicken thighs, sweet potato, pumpkin puree, blackberries, and greens
  • Chicken thighs have been my go-to lately, and I just cook them up in the crock pot with apple cider vinegar, chicken broth, and olive oil. Yum! I had this for breakfast today and it held me over nicely, considering I ate breakfast around 9:45 and then didn't eat lunch until 3:00pm. Ooops! Blackberries have really become my fan-favorite of fruit lately, especially because the blueberries at Kroger have been pretty hit or miss and are sometimes really wrinkly...

2) Ground turkey, brussel sprouts, broccoli/cauliflower whip, kalamata olives, black berries, and greens
  • I think I may have posted this recipe last week, but I'm going to hook you all up with the recipe again ;-) This side lasted me over a week (for better or for worse... it was a bit sour... yet another ooops), and I love throwing some bacon fat and/or pink Himalayan salt for flavor.

3) Ground pork, asparagus, avocado, plantain chips, blackberries, and greens
  • Sometimes I like to treat myself with different meat aside from chicken and turkey, so pork is usually my go-to. ALSO! this was such a good batch of plantain chips, especially when paired avocado. 

4) Chicken thighs, broccoli/cauliflower whip, kalamata olives, zucchini noodles, avocado, and greens
  • This was my lunch from today, and it was much needed considering I had the highest levels of hanger and low blood sugar after the gym. 

5) Yucca root!
  • Not sure what I'm going to make with this bad boy, since I've never cooked with yucca root before, but I found this article and I'm thinking yucca fries would be good... Although, the cinnamon raisin toast sticks are calling my name as well. I'll have to update you all on what I make for next time!
