Super Meals Sunday: My Favorite Dishes From the Week

Okay, so things are somewhat slowing down academically, but I just got a job at the YMCA to bring in some extra $$$ so my schedule has still been pretty jam packed! That's okay though. I operate best when I'm busy.

I am happy to report that I have had zero slip-ups this week with my AIP protocol regiment, and I have upped one of my supplements (Estroblock - helps to detox my body of excess estrogen which is a HUGE issue for me), and I am feeling much, much better. Hopefully this trend will continue! I have a few other supplements that I need to look into (I just started selenium to help my poor old thyroid, and I need to research ferritin some more to help with my iron levels), but I am satisfied with everything right now.

I have been dealing with a nasty head cold the past few days, but I am always surprised at how well my body gets over a cold despite my having an autoimmune disease. I've been touting around a full box of tissues just in case though ;-)

Anyway, I have really been happy with the meals I made this week, and I am excited to try some new recipes later today. While I obviously don't have pictures of the finished product of said recipes, I will post them below in case you want to try them out!

1) Cod, avocado, roasted carrots, zoodles, zucchini, greens, and brussel sprouts
  • This is what I had for lunch today! I also squeezed some fresh lemon juice over the cod and zoodles/zucchini, which was a nice change of pace. I had a pretty intense workout at the gym, and this lunch really helped replenish my energy stores ^_^

2) Sardine salad with greens, avocado, kalamata olives, mango, and cucumbers
  • This salad is one of my favorites to whip up. It doesn't take too much time to put together, and the flavors are bangin' (okay, I'll stop pretending like I'm back in high school now...). I also drizzled some olive oil over everything listed, because as an Italian I have a hard time not drinking olive oil by the gallon.

3) Plantain Chips!
  • While I don't consider these lovelies a meal, I have been obsessed with these chips as of late. I put in a special order at my local Naturally Yours and ordered in bulk, which is really testing my self-control. I am so happy to have found an AIP-approved snack that I don't have to cook. Praise the Lord! P.S. How cute are my pants (pictured below)?! Thanks Target <3

4) Chicken thigh, brussel sprouts, roasted carrots, greens, avocado, and mango
  • I try to eat a full avocado every day so I am getting some healthy fats and omegas in my system, also avocados are deeeeeelish! Mango also goes really well with avocado in case you ever whip up some guacamole and want to mix it up :-)

  • My parents are awesome. They sent me this care package as an Easter gift and I have loved everything that I've tried so far! The package came with sweet potato chips, coconut wraps, seaweed, sardines, tuna, salmon, bison meet (with bacon and cranberries!),  and coconut chips. I'll have to report back after I try everything :-)

6) Chicken thigh, coconut chips, greens, and carrots

  • I love having full meals for breakfast instead of smoothies, which is what I used to have every morning back in the day. These dishes keep me full and energized for the day, which really helps my overall mood and productivity levels.

7) Yucca fries! :-)

  • I am happy to report that my experiment with yucca fries went really well :-) These bad boys were delicious and I ate them all in one sitting which made me fully and happy. Here is the recipe in case you wanted to try it for yourself! I fried them in bacon fat btw!
